Barley Mushroom Soup Vegetarian Style
We love a good heart healthy soup that appeals to all eaters! This soup is Vegan friendly, Vegetarian friendly and of course Gluten Free.
No matter what your Food-Attitude is, you will enjoy this quick-cooking mushroom barley soup.
We often tend to forget about barley when making healthy soups, but barley is a great choice because it is a high-fiber grain that is an important part of a healthy diet. Barley is also easy on the budget and a little bit goes a long way.
Of course this soup is just as healthy and delicious if you use beef broth, so use whatever broth suits your needs.
Great soup for any Vegan, Vegetarian or Gluten-free Diet
- 1 tablespoon olive oil
- 1 small onion, diced fine
- 1-1/2 cups celery, sliced
- 1-1/2 cups carrots, sliced thin and chopped
- 3 cloves garlic, minced
- 1 lb. fresh mushrooms, cleaned and sliced
- 4-1/2 cups vegetable broth
- 1/4 cup tomato paste
- 3/4 cup quick cooking barley
- 2 tablespoons fresh parsley, chopped
In a medium soup pan, gently cook onion, celery and carrots over medium heat.
Add garlic and mushrooms to the pan and continue cooking for about 3 minutes. Lightly salt and pepper mushrooms as they cook.
Stir in broth, tomato paste and 1 cup of water.
Bring to a light boil and stir in barley and parsley.
Cover; reduce heat and simmer for 25-30 minutes or until the barley is tender.
