We love any chicken salad, but this chicken salad is definitely one of our favorites!

How to Make Delicious and Healthy Curried Chicken Salad

Change up your usual chicken salad recipe with this super-delicious Curried Chicken Salad that is perfect for a luncheon with the girls/guys or a light and delicious dinner.

We always make our own shredded chicken to save money, and if you are not sure how to do this read below where we will show you two ways you can do this quickly.

It’s always so much cheaper to buy the split chicken breasts with skin and bones. Don’t worry about the skin, it will just add more flavor and it’s very easy to remove after the chicken has been cooked.

Ingredients
  • 4 cups shredded chicken
  • 3/4 cup diced celery
Sauce Ingredients
  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons honey
  • 1 teaspoon curry powder
  • 2 tablespoons Smucker's Simply Fruit, Apricot
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
Instructions
  1. Place chicken and celery in a bowl and lightly salt & pepper.

  2. Mix together sauce ingredients in a small bowl. Pour over chicken and celery. Stir gently to coat with sauce.

  3. Leave in the refrigerator for an hour before serving.

How to Easily Make Shredded Chicken

Learn how to make your own chicken for fresh and healthy salads.

Oven Roasted Chicken Breasts

3 1/2 pounds split chicken breasts (bone-in, skin-on)
1/2 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Preheat oven to 350 degrees F.

Spray a baking sheet with nonstick spray. Rub chicken breasts with olive oil and lightly sprinkle with salt and pepper.

Bake for about 45-55 minutes or until chicken is cooked through. Remove from oven and let cool. Shred chicken using two forks.

Stove Top Cooked Chicken Breasts

1-1/2 lbs. boneless chicken broth
can chicken broth
salt & pepper

Lightly salt and pepper both sides of chicken breasts. Place chicken breasts in a sauce pan with chicken broth. Bring broth to a light boil; reduce heat and cover. Simmer for about 8-10 minutes or until chicken is cooked through.
