Creamy Pumpkin Soup Recipe

*If you chop the onions very fine in a food processor before cooking, they will simply melt into the soup and you won’t need to blend in a blender for creaminess.
Delicious Creamy Pumpkin Soup Recipe - Perfect for Chilly Fall Weather.
- 1 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion diced fine
- 2 cloves garlic diced fine
- 1 (15 oz) can of pumpkin
- 3 cups chicken broth
- 1-1/2 cups apple cider
- 3 oz. cream cheese
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Melt oil and butter in a medium saucepan; saute onions and garlic until very soft.
Add pumpkin to the saucepan and stir.
Whisk in broth, apple cider, cinnamon, salt, and pepper.
Simmer soup for 15 minutes.
Add cream cheese to the soup in small pieces and cook for another 2 minutes.
