Creamy Potato Soup with Mushrooms and Kale

There aren’t many better food experiences like a nice warm bowl of homemade soup on a chilly day, and this creamy soup with mushrooms, kale and potatoes is not only nourishing, but is also delicious.

Delicious and Healthy - Creamy Potato Soup with Mushrooms and Kale
- 2 tablespoons olive oil
- 1 medium onion, diced fine
- 4 cloves of garlic, diced fine diced fine
- 1 (8 oz.) package sliced baby bella mushrooms, chopped
- 1/2 tablespoon Worcestershire sauce
- 1 medium potato. peeled and diced small (3 cups)
- 1 bunch kale cleaned and cut into small pieces (2 cups)
- 4 cups chicken broth
- 2 tablespoons dry sherry
- 1 cup milk
- 1 tablespoon flour
- 1/2 cup shredded swiss cheese

Using a medium soup pot, saute onions, garlic and mushrooms until the mushroom soften.

Sprinkle mushrooms with Worcestershire, salt and pepper while cooking.

Add the potatoes to the pot and cook for about 2 additional minutes.

Sprinkle lightly with salt and pepper and add the kale.

Stir in the chicken broth and bring to a light boil; reduce heat and simmer for 20 minutes.

Stir in sherry and let cook for 1 minute.

Mix flour with milk and add to the soup along with the swiss cheese.

Turn up heat and cook until soup thickens.
Fill your sink or a large bowl with water and add a few splashes of vinegar to the water. Swish kale around in the water to remove any debris. Toss kale into a strainer and give it a quick rinse. Leave the kale to drain for a few minutes. Remove the tough inner rib of the kale with a sharp knife. Chop remaining kale into small pieces.
