Creamy and Delicious Lemon Orzo Pasta with Zucchini

This side dish is a great way to use up that fresh garden zucchini! It’s lemony and creamy and just big spoonfuls of overload veggie delicious!
The fresh zucchini actually melts right into the pasta making this perfect for those picky little eaters.
Add some summer corn on the cob and fresh tomatoes and this could definitely be served as a main course.

Perfect side dish for summer
- 2-1/2 cups shredded zucchini (2 cups)
- 2 tablespoons of butter
- 1 tablespoon olive oil
- salt & pepper
- Juice of 1 small lemon
- 1 cup orzo pasta
- 1 15 oz. can chicken broth
- 1/4 cup of shredded Parmesan cheese

In a medium saucepan, saute zucchini in olive oil and butter for about 3-4 minutes.

Salt and pepper zucchini as it cooks.

Add orzo pasta to the pan and squeeze juice of 1 lemon over zucchini and pasta; stirring to combine.

Add 1 can of chicken broth and stir lightly until this reaches a light boil.

Reduce heat and simmer for 10 minutes, stirring often.

Remove from heat and stir in cheese.
