Easy and Delicious Chicken Parmesan Casserole
Sometimes you just need something cheesy and delicious for dinner. Something totally satisfying and filling. Maybe some chicken covered with tomato sauce and cheese baked on top of your favorite rotini pasta!
Chicken Parm Casserole!
Follow along with us as we make this easy Chicken Parmesan Casserole that is perfect for any night of the week.
Use about 3 cups of shredded leftover chicken for this recipe. If you do not have leftover chicken, you can quickly boil your boneless chicken breasts in chicken broth.
To Boil Your Boneless Chicken Breasts Quickly –
For this recipe, use 1 lb. of boneless chicken breast. Lightly salt and pepper both sides of the chicken breasts. Bring 2 cups of chicken broth to a light boil in a medium skillet with a lid. Place chicken in the broth; reduce heat and simmer for about 7-10 minutes or until chicken is cooked through. Flip the chicken twice during cooking. Remove chicken to a cutting board and shred using two forks.

Cheesy Chicken Parmesan Casserole with Rotini Pasta
- 4 cups rotini pasta
- 1 tablespoon butter
- 1 (24 oz) jar Marinara sauce
- 3 cups shredded chicken ( or 1 lb. boneless chicken boiled & shredded)
- 1/2 cup seasoned Panko bread crumbs
- 1 tablespoon olive oil
- 1-1/2 cups shredded Mozzarella cheese
- 3 tablespoons shredded Parmesan cheese, divided

Spray a 2 quart casserole dish with nonstick spray.

Cook rotini pasta according to package directions, Drain pasta and return back to the pan. Stir in butter and 1 tablespoon Parmesan cheese. Stir in about 1/2 of the marinara sauce and heat until just warm.

Pour pasta mixture into the casserole dish and spread out with a spoon.

Add chicken on top of the pasta layer and pour on the remaining sauce. Spread sauce with a spoon to cover chicken.

Sprinkle with remaining Parmesan cheese and the Mozzarella cheese

Mix the breadcrumbs with oil and sprinkle over top. Bake covered for 20-25 minutes.
You can certainly make your own breadcrumbs, but for this chicken parm casserole recipe we used Progresso Italian Style flavored crumbs.
