Cast Iron Skillet Potatoes – Roasted Potatoes
Learn how to make these family-delicious Cast Iron Lemony Skillet Potatoes in the oven for a perfect side dish for fish, chicken or even burgers.
To make these baked potatoes even more yummy than they are, sprinkle with freshly crumbled feta cheese right before serving.
What You Need to Make These Greek Potato Wedges – Gather Your Ingredients –
- Russet or other starchy potatoes
- Garlic powder
- Chicken broth
- Extra virgin olive oil
- Fresh lemon juice
- Lemon zest
- Dried oregano
- Salt and pepper
How to Make These Delicious Greek Potato Wedges in Your Cast Iron Skillet
STEP 1. Peel potatoes
STEP 2. Preheat Oven to 400 Degrees
STEP 3. Arrange potatoes in a cast iron skillet. Sprinkle with garlic salt and salt & pepper.
STEP 4. Whisk together the chicken broth, olive oil, lemon juice, lemon zest and oregano. Pour over potatoes.
STEP 5. Place potatoes in the oven and cook for 25 minutes. Turn potatoes and cook for another 25 minutes.
STEP 6. Remove from the oven and drain of excess liquid. Put potatoes back into the oven for about 5-7 minutes or until they start to brown.
Delicious Side Dish of Lemony Potatoes made in the Skillet
- 2 1/2 lbs. Russet or other starchy potatoes peeled and cut into thin wedges
- 1 teaspoon garlic powder
- 3/4 cup cup chicken broth
- 1/4 cup extra virgin olive oil
- ½ cup fresh lemon juice
- 2 teaspoons fresh lemon zest preferably organic
- 1/2 tablespoon dried oregano
- salt and black pepper to taste

Place top oven rack in the center position and pre-heat oven to 400°F.

Prep and arrange the potatoes in a single layer in a large cast iron skillet. Sprinkle with the garlic powder and season with salt and black pepper, to taste. Set aside.

Whisk together the chicken broth, olive oil, lemon juice, lemon zest and oregano in a medium bowl and pour over the potatoes.

Place the skillet in the pre-heated oven and cook for 25 minutes before carefully turning the potatoes. Return to oven for another 25 minutes.

After cook time is complete, remove the skillet from the oven and carefully drain and reserve any excess liquid in the skillet. Return to oven for another 5 minutes or until the potatoes nicely browned on the edges.Tip: You can also place the skillet under a hot broiler for 2-3 minutes for even crispier results.

Remove from oven and cool slightly before serving with some of the reserved cooking liquid drizzled on top. Enjoy!
Potato wedges always make a great choice for a dinner side dish. If you are vegetarian, potatoes can also make for a great entree if served with a healthy salad and side vegetables like roasted broccoli. Serve roasted potatoes with a little sour cream and chives or even a side of Ranch dressing.
What Type of Potatoes to Use in This Recipe?
We use russet potatoes for this recipe because they are a starchy potato. High-starch potatoes makes for the best baking potato. Yukon gold potatoes also would work well too.
Cooking /Baking Potato Tip –
For best results, drain and reserve excess cooking liquid after 45 minutes. Then, place the skillet back in the hot oven for another 5 minutes or until the potatoes are nicely browned and crispy on the edges.

All potatoes contain healthy amounts of fiber, vitamin C, vitamin B6, potassium and manganese and minerals. This makes them a great choice for a dinner side dish.
