We love this moist and tasty muffin recipe and bake these just about every week to serve for breakfast or as a quick dessert with dinner.
How To Make Delicious Banana Bread Muffins –
Mix banana, eggs and oil until well incorporated.
Using the low speed on your mixer, add in the sugar.
Using the low speed on your mixer, add in the vanilla pudding mix.
Mix in the remaining dry ingredients.
Add the chips and stir!
Fill muffin cups and bake in a 375 degree oven for 15-20 minutes.

Super Delicious Banana bread muffins for breakfast treat
- 5 large large very ripe bananas, mashed
- 4 large eggs
- 2/3 cup coconut oil
- 2 cups all-purpose flour
- 1 ½ cups sugar plus 1 tablespoon for garnish
- 1 3.5- oz box vanilla instant pudding mix
- 1 teaspoon baking soda
- 1 1/2 teaspoons salt
- 1 cup chocolate chips plus ¼ cup for garnish
- 1 cup white chocolate chips plus ¼ cup for garnish

Preheat oven to 375°. Spray standard size muffin pan with coconut oil or line with cupcake liners.

In a large mixing bowl, add the bananas, oil, and eggs. Beat with stand or hand mixer on medium speed until well incorporated.

Add in the sugar and mix on low speed until well incorporated.

Add in pudding and mix on low speed until well incorporated.

Slowly add in the dry ingredients and mix on low speed until well incorporated.

Stir in the 1 cup of chocolate and white chips.

Fill muffin tin 2/3 full. Sprinkle with 3-4 chocolate and 3-4 white chips. Bake for 18-20 minutes or until a toothpick comes out clean. Remove from oven. Sprinkle with sugar. Allow to cool for 15-20 minutes before removing from pan.
Beat using your hand mixer on medium speed.
Stir in the chocolate and white chips.
Allow Banana Muffins to cool for about 15-20 minutes before serving. Enjoy!
