Preheat oven to 375°F. Spray a cookie sheet with nonstick spray.
Place ground chicken into a bowl and sprinkle with salt and seasonings. Gently mix to combine.
Using a deep flat bowl, mix together the bread crumbs and cheese.
Drop 1 tablespoon of chicken into the bread crumb mixture, coat both sides.
Lay coated chicken onto baking sheet and press lightly into a flat, oval, chicken tender shape, roughly 1/2 inch thick.
