Ingredients

  • 1 lb. ground turkey
  • 2 cups bread stuffing cubes
  • 3/4 cup chicken stock
  • 1 small onion
  • 1 stock of celery
  • 1 medium carrot
  • 3-1/2 tablespoons fresh parsley
  • 2 large eggs
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400 Degrees
  2. Line a cookie sheet with parchment paper
  3. Place stuffing cubes in a food processor and chop the cubes.

  4. In a large mixing bowl, mix stuffing with the chicken stock.

  5. Puree onion, celery, carrot, garlic and parsley in a food processor.

  6. Mix with the stuffing and chicken stock; add in the eggs and salt & pepper.

  7. Mix with the ground turkey and roll in balls,

  8. Place the meatballs on the cookie sheet and drizzle with the olive oil.

  9. Bake for 20-30 minutes.
