Turkey and Stuffing Meatballs

Ingredients

  • 1 Pound of Ground Turkey
  • 2 Cups bread Stuffing Cubes
  • 3/4 Cup Chicken Stock
  • 1 Small Onion
  • 1 Stock of Celery
  • 1 Carrot
  • 3 1/2 Tablespoon’s of Fresh Parsley
  • 2 Eggs
  • 2 Cloves of Fresh Garlic
  • 3 Tablespoon’s of Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400 Degrees
  2. Line a cookie sheet with parchment paper
  3. Place Stuffing Cubes in a food processor and chop the Cubes.
  4. In a large mixing bowl, mix Stuffing with the Chicken Soup Stock.
  5. Place Onion, Celery, Carrot, Garlic and Parsley and Purée in food processor.
  6. Mix with the Stuffing and Soup Stock, add the eggs and Salt and Pepper.
  7. Mix with the Ground Turkey and roll in balls,
  8. Place the meatballs on the cookie sheet and drizzle with the Olive Oil.
  9. Bake for 20-30 minutes.
