- 8 eggs hard boiled and peeled
- 3-4 tablespoons real mayonnaise
- 2-3 teaspoons yellow mustard
- salt & pepper
Using a very sharp knife, slice each egg in half lengthwise. Do not use a perforated knife as this can tear the eggs.
Very carefully scoop out the hardened yolk and place them in a bowl. Smash with the back of a fork and then lightly salt and pepper.
Mix in mayonnaise and mustard. Stir with the fork until creamy. Taste and add additional mayonnaise or mustard if necessary. Add additional amount of salt and pepper if needed.
Using a teaspoon, scoop the mixed yolk into each half of the egg. Finish eggs with a sprinkle of paprika.
If you have mustard haters at your table, try making traditional deviled eggs without the mustard – or better yet, make just a few eggs without the added mustard.
Deviled means “zesty” so I guess you could call them undeviled eggs …
So how long do deviled eggs stay good in the refrigerator?
Deviled eggs should last about 3-4 days if covered tightly and left in the fridge. If you want to leave your hard boiled eggs in the refrigerator – they should last about 1 full week without going bad.
