When you need it
quick, DinnerPlanner loves "Simply Potatoes."

Here's a delicious recipe for Super Bowl chili recipe shared with us by long-time subscriber Donna Marksberry. You don't even have to be a Bengals fan to enjoy it!
CINCINNATI CHILI
Ingredients:
1 large onion, chopped
1 lb. ground beef
1 tsp. minced garlic
1 Tbsp. chili powder
1 tsp. ground allspice
1 tsp. cinnamon
1 tsp. cumin
1/2 tsp. cayenne pepper
1/2 tsp. salt
1 1/2 Tbsp. unsweetened cocoa
15 oz. can tomato sauce
1 Tbsp. Worcestershire sauce
1 Tbsp. cider vinegar
1/2 c. water
16 oz. box of spaghetti
Toppings:
Shredded mild cheddar cheese
chopped onions
16 oz. can red kidney beans, heated
Oyster crackers (optional side)
2-way = chili and spaghetti
3-way = chili, spaghetti, and cheese
4-way = chili, spaghetti with onions or beans, topped with cheese
5-way = chili, spaghetti, beans, onions, and cheese
Directions:
In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked. Add allspice, cinnamon, cumin, cayenne pepper, salt, unsweetened cocoa, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 hour. Remove from heat.
Cook spaghetti according to package directions and transfer onto individual serving plates (small oval plates are traditional). Ladle chili over spaghetti and serve with toppings of your choice. Oyster crackers are served on the side.
We love Frank's hot sauce with it, too!
PITTSBURGH KIELBASA & GREEN BEANS
INGREDIENTS:
1 (1 lb.) package of Kielbasa (sliced into 1" pieces or
smaller)
1 (1lb.) bag frozen French cut green beans (thawed)
1 medium onion
1 tablespoon olive oil
1 tablespoon butter
3 tablespoons lite Soy Sauce
2 tablespoons orange juice
1 teaspoon basil
In a medium/large skillet with lid, saute onion in olive oil
& butter for about 1 minute. Add kielbasa and saute for
another 3-4 minutes.
Combine soy sauce, orange juice, and basil, stir to blend.
Add mixture to pan and stir to blend. Add green beans,
stirring again until well blended.
Cover and simmer for 6 minutes.

FANS' FAVORITE REUBEN
SANDWICHES
3-3 1/2 lbs. extra-lean corned beef, sliced thin
3-4 loaves rye bread
1 c. mayonnaise
2-3 cans (1 lb.) sauerkraut, drained
3 lbs. Swiss cheese, sliced
1/2 lb. margarine, melted
Prepare sandwiches in the following manner:
Place layer of mayonnaise on bread, followed by the corned beef,
approximately 2 Tbsp. sauerkraut, and 1-2 slices of Swiss cheese.
Cover with top slice of bread.
Brush sandwiches with melted margarine. Preheat griddle iron on
stove top. Grill sandwiches on both sides until delicately browned.
If desired, you can also broil the sandwiches. Set oven control to
broil, and place sandwiches under broiler. Turn when 1st side is
browned. Be careful not to burn.

If you are looking for a classic "Pittsburgh Pierogie"
recipe that tastes just like real Pierogies, then this is
it. Simple to prepare and sinfully delicious.
PIEROGIE CASSEROLE
- PITTSBURGH STYLE
INGREDIENTS:
10 lasagna noodles cooked
1 (24 oz) package of Simply Potatoes
8 oz. sour cream
1 tablespoon chives
2 1/2 cups cheddar cheese
1 large white onion - chopped
1 stick butter
Salt & Pepper
DIRECTIONS:
Preheat oven to 350 degrees
Melt stick of butter and slowly saute onions careful not
to burn. Lightly salt & pepper onion mixture.
Microwave potatoes according to directions.
Lightly coat the bottom of your lasagna pan with
butter.
Place 5 noodles on bottom of lasagna pan overlapping each
other.
Spread half of the onion & butter mixture over
noodles.
Add mashed potatoes - spreading across top of the
noodles with a spatula, salt & pepper.
Mix sour cream & chives, spread this layer on top of
potato layer covering all of the potatoes.
Sprinkle cheese on top of the sour cream mixture.
Add the remaining 5 lasagna noodles same as the bottom
layer.
Spread the rest of the onion & butter on top of the
noodles. Sprinkle remaining cheese over noodles.
Cover with foil and bake for 35 minutes. Let stand for
about 10 minutes before cutting.
PITTSBURGH HAM
BARBEQUES
- 1 small onion, diced
- 3 tablespoons brown sugar
- 1 teaspoon mustard
- 2 tablespoons vinegar
- 1 tablespoons Worcestershire sauce
- 2 cups catsup
- 1/2 cup water
- 1-1/2 pounds chipped ham (Isaly's)
Place all sauce ingredients in a pan. Simmer for 30
minutes. Add chipped ham and simmer 15 minutes longer. Serve
on buns.
Figure about 1/2 lb. per sandwich. Don't forget
the relish!

SUPER
BOWL CHEESE BALL
8 oz. cream cheese, softened
12 oz. blue cheese, crumbled
1 lb. sharp cheddar cheese, grated
1 1/2 oz. onion, finely minced
1/2 tsp. Worcestershire sauce
chopped pecans or walnuts, optional
Mix all ingredients until smooth, using flat beater.
Shape into two balls, about 1 lb. each. Roll into chopped
nuts, if desired. Refrigerate immediately until ready to
serve. Serve with crackers or bread sticks.
END ZONE POTATO SALAD
5-6 lbs. potatoes, peeled
1/4 c. salad oil
1/4 c. cider vinegar
1/2 Tbsp. lemon juice
1 Tbsp. prepared mustard
1 1/2 oz. sugar
1/2 Tbsp. salt
a few drops Tabasco sauce
6 hard-boiled eggs, diced
5-6 large stalks celery, diced
1- 1 1/2 c. chopped onion
1/4 tsp. black pepper
1 c. mayonnaise
Cook potatoes until tender. Dice while warm.
Make a marinade of the oil, vinegar, lemon juice, and
seasonings. Add to warm potatoes and mix gently. Refrigerate
until cold.
Add eggs, celery, onion, and pepper to marinated
potatoes. Mix lightly, trying not to mash the potatoes. Add
mayonnaise, and mix carefully to blend. Chill for at least
an hour before serving.

STUFFED OLIVE APPETIZERS
Jumbo Black Olives
String Cheese, stripped in 1" x 1/4" pieces
Slice of pepperoni
Extra virgin olive oil
Roll bits of string cheese inside slice of pepperoni, stuff into black olive. Drizzle in olive oil, if desired. Serve with bite size crackers.
