1 lb. boneless chicken breast – cut into cubes and lightly salt & peppered
1/3 lb. thick-sliced Deli Ham, diced 
4 slices of Swiss cheese, diced
1 small onion, diced
2 cloves garlic, minced
1 Tbsp. olive oil
1 Tbsp. butter
1 tsp. dried oregano
1 cup chicken broth
1 ( 8 oz.) container heavy cream
1/4 tsp. salt
1/2 Tbsp. dried parsley

In a large skillet, sauté onion in olive oil and butter until soft. Add chicken and sauté again until chicken is cooked through. (about 5-6 minutes.) Add diced ham and garlic; sauté for an additional minute. Sprinkle chicken and ham with oregano. Add chicken broth and salt; bring to a light simmer and let simmer for about 2 minutes. Stir in heavy cream, Swiss cheese, and parsley. Stir until cheese is well blended and melted through.

**This serves about 4 but can be easily doubled. Serve over a bed of rice and with a fresh tossed salad.
