Don't try to introduce too many different items into your salads at once. 

Sometimes you will be amazed at what kids like!

Healthy Salad Recipe

1 bunch of Romaine Lettuce
chopped walnuts
dried cranberries
blue cheese crumbles

Serve with a light balsamic vinaigrette.  



  • Wash your greens thoroughly but make sure they are dry before adding the rest of the ingredients.  Place lettuce in between sheets of paper towels and let sit to absorb the water.

  • When making fresh salads with the robust taste of the cheeses, nuts, fruits, there is no need to add a heavy dressing.  A light vinaigrette will do added in small amounts.

  • Fruits go well with a spinach salad.  Find a great combination of fruits and cheeses.  Spinach & Mandarin oranges with toasted pine nuts with a sprinkle of blue cheese crumbles.

  • Add sliced tomatoes to your salad last.  Tomatoes tend to "bleed" and will water down your salad.

  • When storing leftover salad greens, make sure they are well washed and very well dried.  Store in a large reseable bag with paper towels in between to soak up any remaining moisture.

Sometimes the best salads are simple salads:

4 cups torn romaine lettuce
1 cup cucumber - peeled, seeded and chopped 
1 tomato, chopped 
1/2 cup diced red onion
4 large black olives, quartered 
1/2 cup crumbled feta cheese
1/2 cup olive oil 
2 teaspoons white wine vinegar 
salt & pepper to taste

In a large bowl, combine romaine, cucumber, tomato, red onion, and olives.

Whisk together the vinegar & oil and pour over salad mixture. Add salt & pepper and Feta. Toss together and serve.

We know sometimes it is difficult to sneak those healthy foods into our family!

Try a few variations each week and slowly your family will start to love the idea of a healthy salad for dinner!


Dinner salads normally consisted of iceberg lettuce, tomatoes, cucumber, and a big bottle of Thousand Island dressing. 

Times have changed though and it is very difficult to find a tasty tomato. Iceberg lettuce has been given a bad rap and no one really has time to make fresh salads that often.

But the good news is it's very simple to make a much healthier & tastier salad for dinner. 

Romaine lettuce is loaded with vitamins compared to iceberg lettuce and has three times as much Vitamin C and six times as much Vitamin A. 


Fresh Romaine - 2 cups per person
Mixed Garden Blend - 2 cups per person
Fresh Baby Spinach

Dried Fruits:
Dried cranberries
Dried apricots
Dried Cherries 

Gorgonzola Cheese Crumbles
Blue Cheese Crumbles
Feta Cheese

Walnuts (chopped)
Sunflower seeds
Toasted Chopped Pecans
Toasted Pine Nuts


Avocado slices

Diced Red/Green Pepper

Take one whole fresh beet and grate it with a cheese grater.   (Peel the beet first with a potato peeler)

Grate your own Fresh Carrots.

Grate a small Zucchini 

Grate a couple Radishes

Chilled Asparagus - chopped 

Sliced Mushrooms - white, portobello, shiitake
Cooked  lightly with onions

Purple Onions

Shredded Cabbage - Red and Purple

Garbanzo Beans

Chopped Eggs or egg slices

Green or Black - (black are great - especially with feta cheese)

Green Peas, Cheddar Cheese, real bacon bits mixed with ranch dressing



3 cups chopped iceberg & Romaine lettuce
2 hard boiled eggs, chopped
2 medium tomatoes *
6-7 slices bacon *
1 stalk celery, chopped small
1 small cucumber *
1/2 cup Ranch dressing

*Cook bacon until crisp and drain well on a paper towel.  Chop bacon into small pieces after cooled and drained of grease. Cut tomatoes into quarters and remove the seeds.  Cut tomatoes into small pieces.  Peel cucumber and remove seeds.  Cut cucumber into small pieces.  

Place all chopped ingredients in a medium bowl and blend gently with a fork.  Add Ranch dressing and blend again to mix.

Things you can "gently" sneak into a salad:

  • Artichokes
  • Chopped Fresh Spinach
  • Swiss Chard
  • Kale
  • Bok Choy
  • Shredded Fresh Brussels Sprouts
  • Shredded Radishes 



1 lbs. asparagus
1/4 tsp. salt
dash of pepper
1 tablespoon olive oil
3 cups sliced strawberries
1/2 small red onion, sliced
1/2 cup chopped walnuts
1 bag spring mix salad greens
1 bottle balsamic vinaigrette

Preheat oven to 400 degrees.

Wash asparagus in cold water. Snap the ends off and cut remaining asparagus into 1" pieces.  In a bowl, toss asparagus pieces with olive oil.  Lay asparagus pieces on a baking sheet, sprinkle with salt & pepper. Bake for 15 minutes. 

Toss in a large bowl; cooked asparagus, strawberries, red onions, walnuts, and salad greens.

Drizzle with balsamic vinaigrette.
