Eggs and Asparagus for a Healthy Breakfast
What a great way to start your day! Asparagus contains the type of fiber that promotes healthy gut bacteria and a healthy gut is a happy gut!
By adding vegetables to your morning breakfast, you are sure to get your 5-6 servings of vegetables per day.
Steam the asparagus while cooking the eggs.
It takes about 5 minutes to steam asparagus and the benefits of steaming vs. roasting is less fat and calories. Drizzle a little lemon juice, salt and pepper on the asparagus while steaming and you won’t miss the fat from butter at all.
Add a side of whole wheat toast and some fresh strawberries and you get an AMAZING start to your day.

- 1 bunch of fresh asparagus, cleaned and ends snapped off
- 2 eggs
- salt & pepper
- 1/4 of a fresh lemon
- Steam asparagus for 5 minutes.
- Lightly add lemon, salt and pepper to asparagus while steaming.
- Poach or fry 2 eggs over easy.
- Serve eggs on top of asparagus.
