BEEF MEDALLIONS RECIPE!

This Company Herb Crusted Beef Medallion Recipe is perfect for company.  

This is a great beef recipe when you want to impress your guests.

Medallions are not a type of beef; but  are a way to serve beef.   Round or oval slices of beef, normally served with 3 pieces.

 

 


 

 

COMPANY HERB CRUSTED BEEF MEDALLIONS

1 1/2 lbs. Beef Tenderloin
1 1/2 cups bread crumbs
1 teaspoon dried thyme
1 teaspoon rosemary
1/2 cup Dijon mustard
salt & pepper
butter

Cut the beef tenderloin crosswise into equal rounds.  Pound beef to flatten about 1/4 inch thick.  Season lightly with salt & pepper.

Mix the bread crumbs, thyme, rosemary, and salt & pepper.  (use small amount of salt & pepper.)  

Brush steaks with Dijon mustard and roll into bread crumbs.  Heat about 2 teaspoons of butter in skillet.  Working in batches, saute the beef until brown on the out side but still pink on the inside (about 2 minutes per side.) 

SAUCE:

1 tablespoon olive oil
1 medium onion, chopped fine
1 tablespoon horse radish
1 tablespoon Dijon mustard
1 oz. brandy
2 cups light cream


Saute onions in oil until tender.  Add horseradish, brandy, and mustard.  Stir and cook for about 1 minute.  Add in cream and let simmer until reduced by half.
