AppleSauce Spice Bread

Homemade fresh Applesauce Spice Bread. Here is a recipe that you can use some of your homemade applesauce in! This has the consistency of a zucchini bread or a nut bread, but we bet this recipe would make great muffins, too.

APPLESAUCE SPICE BREAD

1 stick butter, room temperature
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ground allspice
1/2 tsp. grated nutmeg
1/4 tsp. ground cloves
1/2 tsp. salt
1 c. sugar
3 large eggs
1/2 tsp. vanilla
1 c. applesauce
1/4 c. of buttermilk
1/2 c. of chopped walnuts, optional*
1/2 c. raisins
8 oz. frozen whipped topping, thawed


Preheat oven to 375 degrees. 

Butter and flour an 8 inch square baking pan and set aside. In a large bowl, combine the flour, baking soda, cinnamon, allspice, nutmeg, cloves, and salt. Set this aside also.

Using an electric mixer and a large mixing bowl, beat the butter until it is light in color, then add the sugar and beat until fluffy. Add the eggs, one at a time, beating to incorporate after each addition. Add the vanilla and the applesauce and beat until smooth. Mix in half of the dry ingredients. Just before they are blended, add the buttermilk. Then add the rest of the dry ingredients, and mix until completely blended. Try not to over-mix.

Pour the batter into the cake pan. Place on the middle rack of the oven and bake for 25-30 minutes, until done. The cake should spring back to the touch, or a toothpick should come out clean after being inserted in the middle of the cake. Remove the cake from the oven. Let stand for 15 minutes in the pan, then turn the cake upside down onto a rack to cool completely. Top individual serving pieces with a dollop of whipped topping, if desired. Enjoy!

*Walnuts add flavor to this recipe, but we realize not everyone likes nuts in their food. In our family, several have nut allergies so we always leave them out, but with the other ingredients in this recipe, they would be delicious!
